St. Patty's Day is around the corner, how about a different Cabbage to go with your Corn beef??

I'm not much for boiled cabbage.... but I do love cabbage and I love corn beef...

I cook mine nice and slow in the crock pot, turn it off a couple hours early and just let it sit in the water until it just falls apart... YUM!!

This is my absolute favorite cabbage recipe.. I make it with pork roast too, so yum!!

Amish Cabbage

You will need -

1/2 lb bacon
1 Medium Green Cabbage sliced thin
2 Tbsp flour
1/4 cup of apple cider vinegar
1/4 tsp fresh ground black pepper
2 large russet potatoes peeled and sliced abut 1/4 " thick
2 carrots, peeled and sliced thin
1 3/4 Cup HOT water
2 tsp salt
Sour cream 1 cup should do just fine :)

Cook bacon until crisp in an electric skillet. Remove bacon and drain on paper towels.  Once cooled crumble.

Pour off all but 2 Tbsp of grease (just eye-ball it).  Add cabbage, potatoes, carrots and stir. Then stir in flour, water, vinegar, salt and pepper. Bring mixture to a boil. Cover and simmer on low for about 50 minutes or until potatoes are done. Mix in bacon and stir.

Serve on plate and top each serving with sour cream!
